Zaatar Omelette with Olives, Feta and Leftover Toast

This classic breakfast (the omelette) has been transformed with a Lebanese twist.
  • 1 Tbsp Zaatar
  • 1 Tblsp Feta
  • 2 Eggs
  • 5 Olives (pitted)
  • 1 Slice of leftover bread toasted
  • Salt and pepper
  • 1 Tbsp olive oil
  1. Mix the eggs in a bowl and season with salt and pepper. Place a non-stick pan on medium heat.
  2. Add olive oil to pan and then cut up bread and olives. Add them to the pan. Heat for 1 minute.
  3. Add eggs to pan, then add zaatar, then add feta.
  4. Cover pan and cook until omelette is cooked throughout.
