Zaatar Omelette with Olives, Feta and Leftover Toast

- 1 Tbsp Zaatar
- 1 Tblsp Feta
- 2 Eggs
- 5 Olives (pitted)
- 1 Slice of leftover bread toasted
- Salt and pepper
- 1 Tbsp olive oil
- Mix the eggs in a bowl and season with salt and pepper. Place a non-stick pan on medium heat.
- Add olive oil to pan and then cut up bread and olives. Add them to the pan. Heat for 1 minute.
- Add eggs to pan, then add zaatar, then add feta.
- Cover pan and cook until omelette is cooked throughout.
