Oven Baked Chicken Casserole

So Lately I have been trying to learn new recipes. I find that even though I enjoy cooking and love food I end up cooking the same kinds of food with the same cooking techniques and ingredients. I know for most people Chicken Casserole is a dish they probably have all the time and for some, its the only thing they know how to make but for me it is unfamiliar territory. I have never had a true Chicken Casserole, Beef Casserole or Vegetable Casserole but today that trend ends and I will attempt the first casserole dish in my home. So after researching casserole dishes online I have realized its basically meat, sauce and cheese. You can add vegetables, noodles, rice, etc. but for the most part its those 3 primary ingredients placed in a casserole dish and baked. You can almost call it a soup du jour. Why? Pretty much your taking whatever is in your fridge and placing it in a casserole dish, and then you bake it. Casserole du jour!
Oven Baked Chicken Casserole
- 2 Chicken Breast
- 2 Cups grilled salsa
- 1 Cup shredded cheddar
- Salt and pepper
- 1 Tsp chili flakes
- 1 Tbsp olive oil
- Heat saute pan on med-high heat. Season chicken with salt, pepper and chili flakes. Add oil to pan and sear off chicken breasts on both sides.
- Once breasts are seared off, remove and butterfly. Butter and oil the casserole dish you plan to use. Add the chicken, top of with grilled salsa and shredded cheddar. Cover with foil and bake 25 minutes at 400F/204C.
- Once baked for 25 minutes remove foil and bake another 10 minutes in order to brown the top. Enjoy
