This recipe for baked chicken wings in the oven comes out crispy crispy crispy! Chicken wings with baking powder is the secret to crispy chicken wings in the oven. Adding salt and baking powder on chicken wings draws out the moisture resulting in a crispier and crunchier chicken wing.
Chicken wings with baking powder recipe
I use a ratio of 1 tbsp of baking powder to ½ tsp of sea salt. I try to coat pretty liberally but you can also add other seasonings as well. Paprika, cumin, cayenne etc.
Chicken wing rub for baked chicken wings in the oven
- 2 tsp sea salt
- 4 tbsp baking powder
You can try adding the salt and baking powder first and bake half way, and then add the rest of the rub to the chicken wings and finish cooking. Or you can mix everything together and just add it from the beginning of the cooking process.
- 2 tsp paprika

- ½ tsp garlic powder

Jack’s baked chicken wings in the oven recipe
I usually just add salt and baking powder to my baked chicken wings in the oven and then I just sauce them with my preferred sauce of choice, or sometimes I put the sauce on the side. My homemade hot sauce recipe is a great choice if you can handle the heat.
- 15 – 20 chicken wings
- 2 tsp sea salt
- 4 tbsp baking powder

- Preheat oven to 450F°. Mix the salt and baking powder together. Add mixture to chicken wings and coat well. Depending on the size of your wings you may need more mixture.
- Bake chicken wings on a wired rack with a pan underneath to catch the chicken wing juices. If you don’t have a wired rack, use a pan with parchment paper. With this method I like placing the pan on the bottom as the wings will crisp up in a different way.
- Total cooking time should be around 30 min to 45 min, depending on the type of oven you have. I flip the chicken wings half way through their cooking. Ultimately, cooking time is when the chicken wings are cooked to your liking. Most important, as long as they are cooked.
- Once cooked you can take the wings out and sauce, or place the sauce on the side. They stay crispier longer when sauce is on the side. Enjoy
Marinade for chicken wings
For oven baked wings I would only use a dry rub. You can even try a dry brine. What is a dry brine? A dry brine is basically rubbing your chickens with salt and letting it sit in the refrigerator from 1 hr to 24 hrs or even longer. The salt draws out the moisture and breaks down the protein resulting in a crispy chicken when baked. If you use a marinade then you will not achieve a crispy chicken wing as there will be too much moisture. I personally think marinades should be used for grilling or other forms of cooking if your desired result is not too focused on crispiness.
