How to make a salad with Caesar dressing that is not a Caesar salad. My version is a Caper Tomato Salad with Caesar Dressing.
This recipe was inspired by Ina Garten. She calls it Tomato Carpaccio. Very simple and easy to make, however the complexity of the flavors are very deep and yet very familiar of a Caesar salad. The recipe consist of the following, homemade Caesar dressing, sliced tomato, shaved Parmesan, capers, basil, and salt and pepper. The main part of the recipe is the homemade Caesar dressing. The recipe is below.
Caesar Dressing
Ingredients
- 2 egg yolks
- 1-2 blanched garlic
- 1/2 lemon juice
- 3 anchovy
- salt and pepper
- 1 tbsp dijon mustard
- 2 tbsp sherry vinegar
- 2 tbsp white vinegar
- 1-2 tbsp parmesan
- 1/3 cup olive oil
Instructions
- Blend all ingredients in a blender except for olive oil.
- Drizzle olive oil until thickened a little bit.
Caper Tomato Salad with Caesar Dressing
Ingredients
- 1 head of romaine
- 1 heirloom tomato sliced 1/4" thick
- 1/2 cup shaved parmesan
- 2 tbsp capers
- 1 tbsp sliced basil
- salt and pepper
- 1 tbsp olive oil
- 4 tbsp Caesar dressing
Instructions
- Build all ingredients by starting with sliced tomato, homemade Caesar dressing and everything else to follow.
What is Caesar salad?
The salad’s creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. Common ingredients in the salad include,
- romaine lettuce
- olive oil
- crushed garlic
- salt
- Dijon mustard
- black pepper
- lemon juice
- Worcestershire sauce
- anchovies
- grated Parmesan cheese
- croutons
The above Caper Tomato Salad with Caesar Dressing can be paired with any protein or really any main dish. Chicken Caesar salad sounds about right but use your imagination.
